This time we would like to introduce “Boulangerie Colon”,

located only 7 minutes by foot from Bus Center-Mae subway station, on the Tozai line!

Colon has been open since 2012, and prides themselves on using 100% Hokkaido flour in their baking process.

They have won awards for their products a number of times, and are a familiar sight in both travel blogs and magazines, as well as at local festivals.

In recent years, the bakery has even made an appearance on Japanese television, raising their brand awareness on a national level.

As soon as you walk in the store you are greeted by a clean, stylish sense of decor and a central table lined with breads that just look absolutely delicious.

With a selection of seasonal choices, you will be hard-pressed to choose which one to buy.

Their kouglof and stollen, two items inspired by Christmas, are especially popular featuring flavors of their respective seasons.

When we paid them a visit this time around, they featured the spring versions,with the kouglof being green tea and cranberry while the stollen was made with beans and berries. 

Even the wrapping is cute, and they make for a great seasonal souvenir.

On the shelves along the wall, you’ll find gifts and souvenirs perfect for occasions, such as baked goods and rusks, as well as wine and cider that pair well with their carefully selected breads. The products displayed are, of course, all from Hokkaido.

To the left of the shelves, there’s also a wine cellar, boasting an unexpectedly extensive selection for a bakery.

At Boulangerie Coron, based on the idea that “local ingredients best suit local bread,” they make bread using 100% Hokkaido-grown wheat. They also strive to use ingredients other than wheat that are sourced from Hokkaido as much as possible.

Mr. Katsuei Shiga, the grand chef, is a pioneer of low-temperature, long-fermentation. In this production method using low-temperature, long-fermentation, natural yeast is used and it ferments at a low temperature for several times longer than usual. This allows the yeast to break down sugars, generating aromas and acidity, resulting in a deep and rich flavor.

The baked bread allows you to savor a mellow umami and the naturally rich aroma of wheat. It is truly a Made-in-Hokkaido deliciousness born from the blend of the chef’s knowledge and skill, and Hokkaido’s ingredients.

The consistently most popular item since the opening is the “Hokkaido Corn Rustic.”

This chewy bread releases the umami of the wheat and the sweetness of the Hokkaido corn throughout your mouth with every bite. It is also available from the coron webshop.

For those who want to enjoy even more Hokkaido corn, we also recommend this. The “Kobore Corn” from the overflowing Kobore bread series is packed with so much corn it’s practically spilling out. While corn bread is common, it’s rare to find bread this densely filled with corn, making it an irresistible gem for corn lovers. Besides corn, there are also other variations in this series, such as those with Dainagon red beans or topped with raclette cheese. Be sure to check them out at the store.

UNWIND HOTEL & BAR SAPPORO offers the popular breakfast selection of baguettes from Boulangerie Colon.

The large holes in the baguette are proof of the yeast’s vitality. Because it’s simple, you can even more fully enjoy the original flavor of the wheat.

Although it’s a hard-type bread, warming it in the BALMUDA toaster provided in your room will make it even more fragrant and give it a chewy texture.

The four daily rotating soups all use plenty of Hokkaido ingredients, so please enjoy the delicious flavors of Hokkaido to your heart’s content together with the baguette.
