Hokkaido is a foodie’s paradise! When you think of Hokkaido, what comes to mind? Maybe its top-ranked fresh produce, rich dairy products like butter and cheese, or world-famous seafood like uni and salmon roe?
But did you know? Hokkaido also leads Japan in cattle farming and Wagyu beef production! With around 30 unique Wagyu brands, this region is a meat lover’s dream, making it the perfect place to savor premium, locally sourced beef.

The restaurant we are introducing, “Hokkaido Yakiniku Kaneushi”, purchases a whole head of Shiretoko Beef raised at Ohashi Farm in Ozora Town, located in Eastern Hokkaido.
Shiretoko beef is popular as a return gift for hometown tax donations, and is a nationally famous brand of beef.
At Ohashi Farm, they have a motto of “Made in Hokkaido,” and use a uniquely formulated feed made exclusively for Shiretoko beef, and all forage such as grass is strictly sourced from Hokkaido.
Of course, they are also particular about the water their cows drink, and are said to use the famous water of Mt. Mokoto, called “Ginreisui”.
They also play traditional folk music for the cattle as a way of reducing stress.

The beautifully seasoned meat looks very beautiful and is very popular as a gift.
Each cut of beef graded by the Japan Meat Grading Association with meat quality grades of 5th grade, 4th grade, and 3rd grade.
Only the Shiretoko beef is shipped as Shiretoko beef, and as it can only be produced at Ohashi Farm, it is a rare branded beef that can apparently only ship around 400 head a year.

Lean meat with concentrated flavor and just the right amount of marbling.
When you lightly grill it and put it in your mouth, the soft and melt-in-your-mouth texture is truly exquisite.
The sweetness and aroma of the fat spreads in your mouth, and the meat juices overflow.
It goes great with rice and beer!

Hokkaido Yakiniku Kaneushi buys a whole head of Shiretoko beef.
One of the attractions is that you can fully enjoy Shiretoko beef offal and liver to your heart’s content.
Although it’s a part that many people don’t like, Shiretoko beef’s offal liver has no odor at all and is impressively delicious.
When you think of Wagyu beef, you think of the meat, but we also want you to try the innards as well.

In addition, Hokkaido Yakiniku Kaneushi is a restaurant where you can eat raw meat, which is rare in Sapporo, and is certified by the Sapporo City Health Center as a “certified restaurant that handles raw meat for consumption.”
You can also enjoy meat sushi, yukhoe, and meat sashimi.
This is the only place where you can fully enjoy Shiretoko beef, the finest Japanese black beef worthy of the name Shiretoko, a world heritage site!
