We are excited to introduce two new shime parfaits at Bar Ignis Otaru, located within our hotel.
The “Shime Parfait” Culture from Hokkaido, Sapporo
What do you enjoy after a night out or to finish off a meal? While ramen or rice porridge are classic choices, the “shime parfait” has been gaining attention in recent years as a dessert tradition born in Sapporo, Hokkaido.
At Bar Ignis Otaru, we have crafted two original parfaits, perfect for wrapping up your evening in Otaru.
A Special Shime Parfait to Light Up Your Night in Otaru
At Bar Ignis Otaru, we have crafted two original shime parfaits: the Unwind Yuzu Parfait, which perfectly balances the refreshing citrus acidity with the rich flavors of house-made gateau chocolat and nama chocolate, and the Unwind Apple & Caramel Parfait, featuring Hokkaido ice cream and yogurt paired with spiced house-made caramelized apples.
Unwind Yuzu Parfait （1,600 yen）
Served in a large cocktail glass, this parfait starts with a layer of crumbled house-made scones infused with yuzu syrup, followed by coffee jelly, Hokkaido cream, and yuzu sorbet. Topped with fresh orange, marmalade, house-made gateau chocolat, and nama chocolate, the finishing touch includes pistachios and almond tuiles.
Yuzu and chocolate may not be a common pairing, but the refreshing citrus notes complement the richness of the chocolate, creating a well-balanced, light-yet-decadent dessert.
Unwind Apple & Caramel Parfait（1,500 yen）
Presented in a charming tulip glass, this parfait begins with crumbled house-made scones soaked in chai syrup. Layers of cream, caramelized apple sauté, and vanilla ice cream are topped with a generous drizzle of caramel sauce. Finishing touches include pink peppercorn, pistachios, pecans, and a dried apple garnish.
The combination of caramelized apples and caramel sauce creates an indulgent treat, while the spices and pink pepper add an elegant depth, making this a parfait that adults can truly enjoy.
A Customizable Shime Parfait Experience for Adults
For an extra layer of indulgence, Bar Ignis Otaru offers alcohol pairings to drizzle over your parfait. Our bartenders have selected liqueurs that perfectly complement the flavors:

- Nikka Apple Brandy
- Orange Liqueur
- Coffee Liqueur
- Amaretto
