A new sensation of shaved ice created by a French chef with 20 years of experience is now available

Since last autumn, THE LIVELY OSAKA HONMACHI has embraced the concept of “Emode (Emotional × Mode),” inviting guests to enjoy original hotel sweets and proposing a new hotel stay experience through food. Crafted by a French chef with 20 years of expertise, these desserts are both trend-setting and classic, captivating guests with their innovative and refined flavors that reflect the chef’s dedication to French culinary essence.

This summer, we have introduced two new sensations of shaved ice that combine Japan’s summer tradition of “kakigori” with the French dessert “entremet glacé” (ice cake). One version features homemade lemon and mint granite as the base, enhanced with seasonal peaches and mangoes, all enveloped in cream. The crisp textures of mille-feuille and tart pastry add accents, ensuring each bite offers a variety of textures and flavors. These hybrid sweets, showcasing the creativity of our French chef, are exclusively available at THE LIVELY Osaka Honmachi this summer. “Compote of peaches with mille-feuille”

Inspired by Peach Melba.

This dish is based on the classic Peach Melba flavors of peaches, raspberries, and vanilla cream. It features a refreshing granite with lemon and fresh herb flavors such as mint, complemented by layers of pie crust, jelly, and vanilla cream for a balanced taste. Additionally, it is topped with chunky peaches and crispy mille-feuille for a delightful texture.

“Tropical fruits and guimauve”

Inspired by Tarte au Citron.

This dish is based on the classic Tarte au Citron flavors of lemon cream, tart pastry, and meringue. It features a refreshing granite with lemon and fresh herb flavors such as mint, complemented by seasonal fruits like mangoes and passion fruits. Additionally, it is topped with fluffy guimauve with a lightly browned texture.

Chef: Kohei Nishihura

Having trained in restaurants in Kobe, Osaka, and France, Kohei Nishihura served as head chef at several French restaurants in Osaka, including the modern French cuisine establishment La Chic in Yodoyabashi. In December 2019, he assumed the role of head chef at THE LIVELY KITCHEN OSAKA HONMACHI. For the appetizers in his course meals, he offers French delicatessen-inspired dishes. Striking a delicate balance between classic and modern French cuisine, he emphasizes dishes that highlight the vitality of ingredients nurtured by Japan’s four seasons, aiming to create dishes that resonate with both the essence of the ingredients and the diners’ hearts. Utilizing his sense and knowledge cultivated through his experiences, he aims to convey the charm of “Casual French” unique to THE LIVELY OSAKA HONMACHI, where guests can experience French cuisine in a more approachable manner.
