At THE LIVELY OSAKA HONMACHI, we embrace the concept of “Emode” (Emotional × Mode), offering original hotel desserts to introduce a new kind of hotel stay experience through cuisine. These desserts, crafted by a French chef with 20 years of experience, combine the latest trends with a classic touch. They are not only visually stunning and worthy of capturing in photos but also feature authentic flavors infused with the chef’s passion for French culinary excellence.

This autumn, we are introducing a unique hybrid dessert called “Secret de Pomme” (French for “The Secret of the Apple”), which blends the essence of French pastry with Japanese sweets, featuring the season’s star fruit—the apple. This charmingly plump red apple may look like a real apple at first glance, but it is actually a mousse cake inspired by the traditional French dessert “Tarte Tatin.” When sliced, a rich caramel sauce flows out, complementing the compote mousse that is infused with the essence of apple. Together, they create a taste experience reminiscent of the caramelized apples found in a Tarte Tatin. Enjoy it with a waffle filled with slow-cooked apple and chestnut paste, adding texture and flavor that brings you closer to the traditional Tarte Tatin yet with a novel twist. Accompanying the dessert are cube-shaped yokan (Japanese jellies) made with purple sweet potato and pumpkin, offering a gentle sweetness and depth of flavor that bring a hint of Japanese tradition to the dish.

From December to the end of January 2025, “Secret de Pomme” will be available in variations perfect for Christmas and the winter season. In February 2025, it will be tailored for Valentine’s Day. Whether as a delightful treat for seasonal events or a new menu to enjoy each season for our repeat guests, there is something to look forward to every time. Chef: Kohei Nishihura

Having trained in restaurants in Kobe, Osaka, and France, Kohei Nishihura served as head chef at several French restaurants in Osaka, including the modern French cuisine establishment La Chic in Yodoyabashi. In December 2019, he assumed the role of head chef at THE LIVELY KITCHEN OSAKA HONMACHI. For the appetizers in his course meals, he offers French delicatessen-inspired dishes. Striking a delicate balance between classic and modern French cuisine, he emphasizes dishes that highlight the vitality of ingredients nurtured by Japan’s four seasons, aiming to create dishes that resonate with both the essence of the ingredients and the diners’ hearts. Utilizing his sense and knowledge cultivated through his experiences, he aims to convey the charm of “Casual French” unique to THE LIVELY OSAKA HONMACHI, where guests can experience French cuisine in a more approachable manner.
