Dinner course “Shiraumeiro

Beef and Shibazuke Tartar Sauce Crepe

This 8-course dinner menu, themed around the delicate pink hue of ‘Shiraume-iro,’ inspired by the graceful beauty of white plum blossoms, begins with the appetizer ‘Beef and Shibazuke Tartar Sauce Crepe.’ This dish features lean beef wrapped in a crepe with tartar sauce made from Shibazuke, representing the theme color. For the main meat dish, we serve a juicy grilled prime beef, perfect for the colder season, finished with a rich red wine fond de veau sauce. Accompanying seasonal root vegetables offer a deep flavor, enjoyable either on their own or paired with the meat. The dessert, ‘Koshu Wine Jelly and Panna Cotta,’ presents a snow-like winter treat with a layer of pure white panna cotta beneath a jelly made from ‘Koshu,’ a native Japanese white grape variety. Its fresh and clean taste makes it the perfect finale to the course.

About Chef Yasutomo Nakamura

Born in 1975 in Kumamoto Prefecture, he began his culinary journey after graduating from Nakamura Culinary School. His career started at the Grand Hyatt Fukuoka, where he honed his skills before gaining further experience at various Italian restaurants and large-scale dining establishments. His expertise led him to serve as the Executive Chef at a prominent dining venue in Fukuoka. In 2019, with the opening of THE LIVELY KITCHEN FUKUOKA HAKATA, he took on the role of head chef, bringing his extensive experience and passion for culinary excellence to the forefront.
