Dinner course “Hagiiro”

A dinner course with 8 dishes, themed around the bright red-purple color of “Hagi-iro” inspired by the blooming autumn hagi flowers. The amuse-bouche features a trio of plates: fried figs, marinated shrimp, and beet-infused sushi rolls, all presented with a moon-viewing theme to evoke the autumn season. The appetizer, “Toro Katsuo no Hagi-iro,” uses a rich, fatty bonito known as “returning bonito” that resembles tuna toro, garnished with ingredients in the Hagi-iro color scheme, such as red tassel sprouts and red amaranth, to capture the theme color.

Lunch course “Akaneiro”

A lunch course featuring 6 dishes, themed around the deep red color “Akane-iro,” dyed with the roots of the Akane grass. The course begins with a charming amuse-bouche: bite-sized cream cheese balls mixed with three types of mushrooms, bacon, and Parmesan cheese. The main course offers options such as autumn salmon with firm, flavorful flesh, or pork marinated in a homemade dipping sauce paired perfectly with apples. For pasta, we recommend an oil pasta with chestnuts and homemade pancetta, capturing the essence of autumn.

About chef Yasutomo Nakamura


Born in 1975 in Kumamoto Prefecture, he began his culinary journey after graduating from Nakamura Culinary School. His career started at the Grand Hyatt Fukuoka, where he honed his skills before gaining further experience at various Italian restaurants and large-scale dining establishments. His expertise led him to serve as the Executive Chef at a prominent dining venue in Fukuoka. In 2019, with the opening of THE LIVELY KITCHEN FUKUOKA HAKATA, he took on the role of head chef, bringing his extensive experience and passion for culinary excellence to the forefront.
